Food safety series first three digests cover Aflatoxins, Fumonisins, Co-exposure of fumonisins with aflatoxins

In a new series of publications, named Food Safety Digest launched in 2018, WHO aims to explain complex food safety topics, such as health risk assessments, and to provide clear and concise information to risk-managers, food retailers and consumers on important food safety issues.

The first three digests in this series provide information on aflatoxins and fumonisins and their co-exposures, which are a group of naturally occurring toxins, produced by certain moulds in food and which can pose a serious risk to human health. The aim of the digests is to provide basic information on the occurrence and health effects of aflatoxins and fumonisins in food and which measures can be taken to reduce the risk.
